For a time, I was the PR director and real-estate marketing director at Amelia Island Plantation off the coast near Jacksonville, FL. We had an amazing food-&-beverage program headed up by executive chef Jackie Burette, late of Paris (France, not Texas), whose previous gig had been head chef at famed La Tour in Indianapolis. There, his sous chef was Wolfgang Puck, who went on to LA to found Spago's, home of the power lunch. This pic shows part of the elaborate buffet he created every Easter in our oceanfront Dune Side Club. For the photogs out there, I took this shot with a softbox and a 35mm lens to slightly exaggerate the foreground.
